Potatoes provide antioxidants, heart health benefits

Potatoes often get a bad rap, as people assume that they are unhealthy. They have heard about how spuds are high in carbohydrates and, depending on how they are served, fat. However, research continues to illustrate how this reputation may not be fully deserved.

For example, a team of investigators recently reported in the Journal of Agriculture and Food Chemistry that a type of potato that is rich in antioxidants known as the Purple Majesty may provide significant heart health support.

The potato gets its name from its distinct bright purple color. While most potatoes have a respectable amount of antioxidants, this particular variety has a much higher quantity.

The study showed that individuals who ate two servings of this potato per day over a period of several weeks experienced significant heart health support.

Findings from the investigation underscore how unfair the reputation of the potato is. When potatoes are fried, loaded with with sour cream or topped with bacon, they are certainly an unhealthy food. However, when they are prepared in a sensible manner they can be an excellent source of antioxidants.
